  • 8 ounces Rotini Pasta Rinse under cold water after cooking.
  • 6 slices Bacon Cook until crispy.
  • 2 cups Fresh Tomatoes Diced and ripe.
  • 2 cups Lettuce Add just before serving.
For the Creamy Dressing
  • 1 cup Mayonnaise Can swap with Greek yogurt.
  • 1/2 cup Sour Cream Adjust to taste.
  • 1/4 cup Milk/Buttermilk For desired consistency.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add rotini and cook according to package instructions for 8-10 minutes, until al dente. Drain and rinse under cold water.
  2. Heat a skillet over medium heat and cook bacon for 6-8 minutes until crispy. Drain on paper towels and chop into bite-sized pieces.
  3. In a large mixing bowl, combine the cooled rotini pasta, chopped bacon, and diced fresh tomatoes. Gently stir until mixed.
  4. In a separate bowl, mix mayonnaise, sour cream, and milk or buttermilk to achieve desired consistency. Season with salt and pepper.
  5. Pour the dressing over the pasta mixture and toss until well-coated.
  6. Add chopped lettuce just before serving and gently fold into the pasta salad.
  7. Chill in the fridge for at least 10 minutes before serving and enjoy.
