  • 1/4 cup Mayonnaise vegan mayonnaise for dairy-free
  • 2 tbsp Fresh Lime Juice brightens flavors
  • 1 tbsp Fresh Chives or dried alternatives
  • 1 tbsp Fresh Parsley or dried alternatives
  • 1 tbsp Fresh Dill or dried alternatives
  • 1 clove Garlic or garlic powder if unavailable
  • 1 tsp Onion Powder
For the Salad
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • 1/2 cup Red Onion sliced
  • 1 stalk Celery diced
  • 4 cups Mixed Salad Greens romaine or spinach alternatives

Method
 

Cooking Instructions
  1. Prepare Chicken: Preheat a grill pan or skillet over medium-high heat. Rub chicken breasts with olive oil, salt, and black pepper.
  2. Cook Chicken: Grill chicken for 6-7 minutes each side until juices run clear and internal temperature reaches 165°F. Let rest for 5 minutes, then cut into chunks.
  3. Make Dressing: Blend avocado, Greek yogurt, mayonnaise, lime juice, chives, parsley, dill, garlic, onion powder, salt, and pepper until smooth. Adjust texture with water if needed.
  4. Combine Salad: In a bowl, mix salad greens with cherry tomatoes, cucumber, red onion, and celery.
  5. Assemble: Add cooked chicken and drizzle dressing over the salad. Toss gently to coat.
  6. Serve: Transfer to plates and enjoy fresh, adding optional garnishes if desired.
