- Preheat your oven to 400°F (200°C) and prepare a baking sheet with non-stick spray.
- Whisk together flour, sugars, baking powder, cinnamon, and cardamom in a large bowl. Cut in cold butter until mixture resembles coarse crumbs.
- In a separate bowl, mix together milk, egg, and vanilla extract. Pour into dry ingredients and stir gently. Fold in chopped rhubarb.
- Using a heaping 1/4 cup, drop fritter batter onto the prepared baking sheet, spacing at least 2 inches apart.
- Bake for 11-13 minutes, or until bottoms are golden brown; check smaller fritters around 8 minutes.
