Step-by-Step Instructions
  1. Prepare Chicken: Cut chicken thighs into 1-inch cubes, drizzle with olive oil, and coat with paprika, garlic powder, black pepper, cayenne, and salt. Toss until well-coated.
  2. Make Bang Bang Sauce: In a bowl, whisk together mayonnaise, Thai sweet chili sauce, sriracha, and lime juice until smooth. Divide into two portions.
  3. Thread Skewers: Thread the seasoned chicken pieces onto skewers, leaving space between each piece for even cooking.
  4. Coat with Sauce: Brush the cooking portion of the bang bang sauce over the raw chicken skewers.
  5. Cooking Methods: Grill skewers at 400°F for 15-20 minutes, turning and basting with sauce; or air fry at the same temperature for 10-12 minutes, flipping halfway.
