- In a bowl, combine mayonnaise, Thai sweet chili sauce, and chili garlic sauce. Mix well and set aside for at least 10–15 minutes.
- In one bowl, whisk together egg and buttermilk. In another bowl, mix flour, panko breadcrumbs, and seasonings.
- Pat shrimp dry, coat in flour mixture, dip in egg mixture, and then roll in flour mixture again. Chill for 20–30 minutes.
- Heat vegetable oil in a deep skillet to 350°F. A small pinch of flour should sizzle when the oil is ready.
- Carefully add shrimp to hot oil and fry for 2-3 minutes on each side until golden brown. Drain on paper towels.
- Drizzle the sauce over the hot shrimp and toss gently until coated. Serve immediately with extra sauce on the side.
