Cooking Instructions
  1. In a medium-sized bowl, combine the shredded chicken with your choice of BBQ sauce, seasoning with salt and pepper to taste.
  2. Preheat a non-stick skillet over medium heat and add 1 tablespoon of butter, allowing it to melt completely.
  3. Place one slice of sourdough bread in the skillet, followed by mozzarella cheese, half of the BBQ chicken mixture, and another layer of mozzarella. Top with the second slice of bread.
  4. Cook the sandwich for about 3-4 minutes until the bottom slice is golden brown and crispy.
  5. Gently flip the sandwich over, add the remaining tablespoon of butter, and cook for another 3-4 minutes until the second side is golden brown and the cheese is fully melted.
  6. Remove the BBQ Chicken Grilled Cheese from the skillet and let it cool for one minute. Cut in half and sprinkle with freshly chopped parsley.
