Ingredients
  

For the Marinade
  • 1 cup ketchup opt for low-sugar versions
  • 1/4 cup honey maple syrup works as an alternative
  • 1/4 cup rice vinegar can substitute with apple cider vinegar
  • 2 tablespoons Worcestershire sauce omit for vegetarian option
  • 2 cloves garlic minced
  • 1 teaspoon sweet or smoked paprika or substitute with chili powder for heat
  • 1 teaspoon coarse kosher salt or use regular salt sparingly
  • 1/2 teaspoon chili powder adjust based on spice tolerance
  • 1/2 teaspoon black pepper
For the Kabobs
  • 1.5 to 2 pounds boneless skinless chicken breasts or thighs juicy thighs preferred for flavor
  • 1 medium pineapple fresh is best, but canned works too
  • 2 medium bell peppers any variety can be used
  • 1 medium red onion can swap with white or yellow onions

Method
 

Preparation
  1. In a medium bowl, combine ketchup, honey, rice vinegar, Worcestershire sauce, minced garlic, paprika, salt, chili powder, and black pepper. Whisk the ingredients until fully blended.
  2. Cut the chicken into 1½-inch pieces and marinate in the mixture for at least 2 hours, ideally up to 24 hours.
  3. Chop the pineapple, bell peppers, and onion into bite-sized pieces.
  4. Assemble the kabobs by threading the marinated chicken, pineapple, bell peppers, and onion onto skewers, alternating them.
  5. Preheat your grill to medium-high heat, then grill the skewers for about 15 minutes, turning occasionally.
