- In a medium bowl, combine 3 tablespoons of extra virgin olive oil, 1 tablespoon of balsamic vinegar, and 1 teaspoon of Dijon mustard. Add a pinch of garlic powder and a sprinkle of salt. Whisk vigorously for about 2-3 minutes until well emulsified and smooth. Set aside.
- In a large mixing bowl, add 6 cups of chopped romaine lettuce or mixed greens. Incorporate 1 cup of sliced cucumbers, 1 cup of halved cherry tomatoes, and 1 finely sliced red onion. Add 1/2 cup of pitted Kalamata olives and crumble in 1/2 cup of feta cheese if desired.
- Gently toss all the salad ingredients together to evenly distribute colors and textures. After about 30 seconds of tossing, the salad should look inviting and ready to be dressed.
