- In a microwave-safe bowl, combine white chocolate chips and coconut oil. Heat in the microwave in 30-second intervals until smooth, about 1 to 2 minutes.
- Lay out six graham crackers on a parchment-lined baking sheet, and spread an even layer of the melted chocolate mixture over each cracker.
- Place the chocolate-coated graham crackers in the freezer for 10-15 minutes until the chocolate firms up.
- In a mixing bowl, combine light whipped topping, birthday cake protein powder, and almond extract. Whip until light and fluffy, about 2-3 minutes.
- Spoon a generous dollop of the whipped mixture onto each chocolate-covered graham cracker. Top with a plain graham cracker to create a sandwich.
- Dip edges of your assembled s'mores in remaining melted chocolate and sprinkle festive sprinkles on top.
- Arrange the assembled s'mores bites back onto the baking sheet and place in the freezer for at least 1 hour.
