- Preheat the oven to 350°F (175°C) and spray a 9x13-inch baking dish with nonstick cooking spray.
- Cook the ground breakfast sausage in a large skillet over medium heat until browned and crumbly, about 5-7 minutes.
- Sprinkle flour over the cooked sausage, stir, then gradually pour in the milk and simmer for 5-7 minutes until thickened.
- Cut the refrigerated buttermilk biscuits into quarters and layer them in the baking dish.
- Pour the sausage gravy over the biscuits. Whisk eggs with a splash of milk, season and pour over the casserole, adding cheese if desired.
- Bake uncovered for 35-40 minutes until the eggs are set and the top is golden.
