Method
 

Step-by-Step Instructions
  1. In a medium saucepan, combine fresh blackberries and water over medium heat. Cook for about 5–7 minutes until the blackberries are soft, stirring occasionally. Sweeten with sugar, remove from heat and let cool. Refrigerate for at least 30 minutes.
  2. In a large mixing bowl, beat together the cream cheese, milk, fresh lime juice, lime zest (if using), vanilla extract, and powdered sugar until smooth and creamy. Cover and refrigerate for about 15 minutes to thicken.
  3. Layer blackberry puree and cheesecake mixture into popsicle molds, starting with blackberry puree, followed by cheesecake mix. Insert sticks into molds and tap gently to settle layers.
  4. Place molds in the freezer and allow to freeze completely for 4–6 hours until firm.
  5. Run warm water over the molds to help release the popsicles. Gently pull on the sticks to remove each popsicle. Serve immediately.
