  • 1 Large Egg or substitute with a flax egg for vegan option
  • 1/4 cup Honey or Maple Syrup maple syrup for vegan option
  • 1 tsp Vanilla Extract
  • 1 tsp Lemon Zest avoid lemon juice
  • 1 tsp Baking Powder
  • 1/4 tsp Salt sea salt preferred
For the Mix-In
  • 1 cup Blueberries fresh preferred or frozen without thawing

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Grease a 24-cup mini muffin pan.
  2. In a blender, combine cottage cheese, rolled oats, large egg, honey or maple syrup, vanilla extract, lemon zest, baking powder, and salt. Blend until smooth, about 30 seconds.
  3. Transfer the batter to a large bowl and gently fold in the blueberries.
  4. Let the batter sit for about 5 minutes.
  5. Fill each mini muffin cup about 3/4 full with the batter.
  6. Bake for 18-22 minutes until golden and springy. Check doneness with a toothpick.
  7. Cool in the pan for 5 minutes then transfer to a wire rack to cool completely.
