  • 1/2 cup Feta Cheese Crumbled, omit for dairy-free.
  • 1/2 cup Walnuts or Pecans Toasted, for added crunch.
For the Vinaigrette
  • 1/4 cup Olive Oil Extra virgin preferred.
  • 1 medium Orange Juice Freshly squeezed.
  • 1/2 medium Lemon Juice Freshly squeezed.
  • 1 Tbsp Honey or Maple Syrup Adjust to taste.

Method
 

Preparation Steps
  1. In a large bowl, combine mixed salad greens, fresh strawberries, segmented oranges, and chopped cucumber. Add thinly sliced red onion.
  2. In a small bowl, whisk together olive oil, orange juice, lemon juice, honey or maple syrup, and season with salt and pepper until well blended.
  3. Drizzle vinaigrette over the salad and toss gently to coat all ingredients evenly.
  4. If desired, sprinkle with feta cheese and toasted nuts just before serving.
  5. Transfer to a serving bowl and serve immediately.
