Method
 

  1. Begin by preheating your oven to 400°F (200°C).
  2. Peel and slice the carrots into uniform pieces, roughly 1 inch long.
  3. In a large pot, bring water to a boil and add the sliced carrots. Allow them to par-boil for about 5 minutes.
  4. In a shallow bowl, combine melted unsalted butter, olive oil, and brown sugar. Stir this mixture until smooth and well combined.
  5. Add the par-boiled carrots to the bowl with your glaze. Gently toss the carrots in the buttery brown sugar mixture until they are completely coated.
  6. Transfer the coated carrots into a baking dish, arrange in a single layer, and bake for 10 minutes. Toss and return to the oven for another 5 minutes, or until tender.
  7. Once baked, remove the carrots from the oven and allow them to cool slightly. Garnish with freshly chopped parsley if desired.
