- In a large mixing bowl, combine halved baby potatoes, melted unsalted butter, minced garlic, salt, black pepper, and paprika. Toss until evenly coated.
- Cut an 18-inch piece of aluminum foil and place the coated potatoes in the center. Fold the foil over the potatoes, creating a sealed packet.
- Place the foil packet onto the preheated grill. Grill for 20-25 minutes, turning occasionally with tongs.
- Check potatoes for tenderness after about 20 minutes. If they need more time, reseal and grill for an additional 5-10 minutes.
- Once tender, open the foil packet and sprinkle with chopped parsley before serving.
