  2. Slice the zucchini in half lengthwise to create boats, and scoop out the seeds.
  3. In a mixing bowl, combine cooked summer vegetables, ricotta, mozzarella, and parmesan cheese with fresh herbs, salt, and pepper.
  4. Carefully spoon the filling into each zucchini half and press down gently.
  5. Spread marinara sauce in the baking dish, place zucchini seam side down, and pour more sauce on top.
  6. Cover with foil and bake for 25-30 minutes until tender and cheeses are melted.
