  1. Preheat the oven according to tater tots package instructions, typically around 425°F (220°C). Spread the tater tots on a baking sheet and bake for 20–25 minutes, or until golden brown. Crush them slightly once baked.
  2. In a large skillet, cook your choice of protein over medium heat, breaking it apart as it cooks. Season with salt and pepper. Cook until browned (about 5–7 minutes) and drain excess fat.
  3. Combine the cooked protein with the slightly crushed tater tots, cheddar, and Monterey Jack cheeses in a mixing bowl. Gently fold to mix.
  4. Warm the flour tortillas in a skillet or microwave to make them pliable.
  5. Lay a tortilla on a surface, add filling, drizzle with chipotle sauce and sour cream, then roll tightly.
