  • 1 cup Croutons added just before serving
For the Dressing
  • 1/2 cup Greek Yogurt full-fat is best
  • 1/4 cup Mayonnaise blend well with yogurt
  • 2 tablespoons Red Wine Vinegar adjust to taste
  • 1 unit Lemon Juice freshly squeezed
  • 1/4 cup Extra Virgin Olive Oil high-quality brand recommended
  • 1 teaspoon Dried Herbs combined parsley, dill, basil, oregano
  • 1 tablespoon Honey to balance acidity
  • 1/4 cup Parmesan Cheese finely grated

Method
 

Dressing Preparation
  1. In a medium bowl, whisk together Greek yogurt, mayonnaise, red wine vinegar, and lemon juice. Gradually drizzle in olive oil while whisking until smooth.
  2. Incorporate dried herbs, honey, and Parmesan cheese, mixing thoroughly. Adjust seasoning as needed.
Vegetable Assembly
  1. In a large mixing bowl, add chopped romaine lettuce, halved cherry tomatoes, sliced cucumber, and thinly sliced red onion.
  2. Add halved pepperoncini and pitted Kalamata olives, then crumble feta cheese over the top.
  3. Toss gently to combine, taking care not to crush the feta.
Final Assembly
  1. Drizzle dressing over the salad right before serving and toss to coat.
  2. Add croutons just before serving to maintain their crunch.
