Ingredients

For the Base
  • 0.5 cups Quick Cooking Oats Choose gluten-free oats for a gluten-free option.
  • 0.5 cups Unsweetened Coconut Milk Almond milk can be used, but coconut flavor will be less pronounced.
  • 1 cups Frozen Mixed Berries Fresh berries can be substituted if desired.
For the Toppings
  • 2 tablespoons Unsweetened Greek Yogurt Use dairy-free yogurt for a plant-based alternative.
  • 1-2 teaspoons Maple Syrup Can substitute with agave syrup or honey for non-vegan.
  • 0.5 cups Coconut Flakes Opt for unsweetened flakes for a healthier choice.

Equipment

  • 16 oz. jar

Method

Step-by-Step Instructions
  1. In a 16 oz. jar, add ½ cup of quick cooking oats and pour in ½ cup of unsweetened coconut milk. Use a spoon to stir the mixture well, ensuring the oats are fully submerged in the milk.
  2. Once your oats and coconut milk are mixed, drizzle in 1-2 teaspoons of maple syrup, if desired. Stir again until all ingredients are combined.
  3. Spoon 2 tablespoons of unsweetened Greek yogurt over the oat mixture, and layer in approximately ½ cup of frozen mixed berries on top of the yogurt.
  4. Seal the jar tightly and place it in the refrigerator overnight, allowing a minimum of 6 hours for the oats to soak up all the flavors.
  5. In the morning, stir the oats to distribute the berries and yogurt evenly, and sprinkle some unsweetened coconut flakes on top before serving.
