Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the cottage cheese, grated Parmesan, and optional ground flaxseeds. Add garlic powder, onion powder, paprika, salt, and pepper, blending until smooth.
  3. Gradually stir in almond flour until the mixture holds its shape.
  4. Portion the chip mixture onto the prepared baking sheet and flatten into uniform discs about ¼ inch thick.
  5. Lightly brush each disc with olive oil.
  6. Place the baking sheet in the oven and bake for 15–20 minutes until golden brown.
  7. Remove from the oven and cool on the baking sheet for about 5 minutes.
  8. Garnish with fresh herbs if desired and serve.
