  1. Start by placing 1.5 pounds of boneless, skinless chicken breasts at the bottom of your Crock Pot. Top the chicken with 1 cup of diced onion and 2 cloves of minced garlic. This will create a flavorful base.
  2. Pour 3 cups of chicken broth over the chicken and veggies, ensuring they are submerged. Next, open and add a 14.5-ounce can of diced tomatoes, stirring gently to combine.
  3. Sprinkle 1 tablespoon of Italian seasoning into the pot, then season with salt and pepper to taste. Give the mixture a light stir to distribute the seasoning evenly. Cover the Crock Pot and set it to cook on low for 6 hours.
