Step‑by‑Step Instructions
  1. Marinate the Chicken: Combine chicken thighs with curry powder, garlic powder, paprika, turmeric, salt, pepper, and oil. Let marinate for 5 minutes.
  2. Sauté the Chicken: Heat a skillet over medium heat, add oil, and cook chicken for 5-6 minutes until golden and cooked.
  3. Sauté the Aromatics: In the same pan, cook onion and garlic for 2-3 minutes until translucent.
  4. Prepare the Sauce: Add red curry paste, stir in coconut milk, and simmer for 3-5 minutes until thickened.
  5. Combine Chicken and Noodles: Add chicken and udon noodles to the sauce, stir well, and simmer for another 2-3 minutes.
  6. Adjust Seasoning and Garnish: Taste and adjust seasoning. Garnish with cilantro, lime, and chili flakes before serving.
