Step-by-Step Instructions
- In a large skillet over medium-high heat, brown the ground beef for 5–7 minutes. Drain excess grease, then add diced onions and minced garlic, sautéing for 2–3 minutes until translucent.
- Transfer the browned beef mixture into the crockpot. Add the undrained diced tomatoes, drained corn, tomato sauce, taco seasoning, paprika, cumin, and beef broth. Stir everything together.
- Cover the crockpot and cook on LOW for 4–5 hours or HIGH for 2–3 hours.
- 30 minutes before serving, add uncooked pasta shells to the crockpot, stirring gently. Cook on HIGH for an additional 25–30 minutes.
- Once the pasta is cooked, stir in shredded cheddar cheese until melted. Taste and adjust seasoning with salt and pepper as needed.
- Serve hot, garnished with fresh chopped cilantro and lime wedges.

Notes
Feel free to customize with extra vegetables like bell peppers or black beans. For added creaminess, incorporate cream cheese or sour cream at the end of cooking.
