  • 1/2 cup Greek Yogurt Can be swapped with sour cream.
  • 2 tablespoons Curry Powder Use mild or medium based on heat preference.
  • 1/2 tablespoon Lemon Juice Fresh juice is best.
  • 1 tablespoon Honey Adjust to taste.
For the Veggies
  • 1 cup Celery Chopped.
  • 1 medium Red Onion Finely diced.
  • 1 cup Carrots Grated.
  • 1/2 cup Raisins Can substitute with dried cranberries.
For the Crunch
  • 1/4 cup Toasted Almonds Can substitute with walnuts or pecans.

Method
 

Steps
  1. Cook Pasta: Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente, around 8-10 minutes. Drain and rinse under cold water.
  2. Make Dressing: In a bowl, whisk together mayonnaise, Greek yogurt, curry powder, lemon juice, and honey until smooth.
  3. Combine Ingredients: In a large bowl, mix cooled pasta, chopped celery, red onion, grated carrots, and raisins.
  4. Toss Salad: Drizzle dressing over pasta and veggies, then gently toss to coat.
  5. Chill and Serve: Cover and refrigerate for at least 30 minutes. Stir before serving.
