- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter to form the crust.
- Press the crumb mixture into the bottom of the springform pan and bake for 10 minutes.
- In another bowl, beat the cream cheese until smooth.
- Add sugar and vanilla extract, mixing until combined.
- Incorporate the eggs one at a time, mixing well after each.
- Stir in lemon juice and lemon zest until fully mixed.
- Pour the cheesecake mixture over the crust and bake for 50 minutes.
- Let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
- Chill in the refrigerator for at least 4 hours before serving.
