Ingredients
  

  • 1 cup Graham cracker crumbs
  • 1/4 cup Sugar
  • 1/2 cup Unsalted butter Melted
  • 4 packages Cream cheese Softened
  • 1 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 3 large Eggs Room temperature
  • 1/4 cup Fresh lemon juice
  • 2 teaspoons Lemon zest

Method
 

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter to form the crust.
  3. Press the crumb mixture into the bottom of the springform pan and bake for 10 minutes.
  4. In another bowl, beat the cream cheese until smooth.
  5. Add sugar and vanilla extract, mixing until combined.
  6. Incorporate the eggs one at a time, mixing well after each.
  7. Stir in lemon juice and lemon zest until fully mixed.
  8. Pour the cheesecake mixture over the crust and bake for 50 minutes.
  9. Let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
  10. Chill in the refrigerator for at least 4 hours before serving.
