  • 1 tablespoon Butter Can be omitted for dairy-free.
For the Sauce
  • 2 cloves Garlic Minced, fresh preferred.
  • 1 cup Chicken Broth Low-sodium preferred.
  • 2 tablespoons Lemon Juice Fresh juice is best.
  • 1 cup Heavy Cream Can replace with half-and-half.
  • 1 cup Parmesan Cheese Freshly grated preferred.
For the Gnocchi
  • 1 pound Potato Gnocchi Opt for store-bought uncooked.
  • 2 cups Fresh Baby Spinach Can swap with kale.

Method
 

Step-by-Step Instructions
  1. Slice the chicken breasts into thin cutlets and season with garlic powder and lemon pepper seasoning.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Sear the chicken for 5–6 minutes on each side until cooked through.
  3. Lower the heat, add butter and minced garlic to the skillet. Sauté for about 30 seconds.
  4. Pour in chicken broth and lemon juice, scraping any brown bits. Bubble for 2 minutes to reduce.
  5. Stir in heavy cream and bring to a simmer. Add uncooked potato gnocchi and cook until tender.
  6. Mix in Parmesan cheese and spinach until wilted and cheese is melted.
  7. Return seared chicken to the skillet and stir to coat. Adjust seasoning before serving.
