- Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking dish with non-stick spray.
- In a large mixing bowl, combine frozen corn, mayonnaise, sour cream, 1 ½ teaspoons of chili powder, garlic powder, salt, and 4 ounces of queso fresco until blended.
- Transfer the corn mixture into the prepared baking dish and spread evenly.
- Sprinkle the remaining ½ teaspoon of chili powder over the top, then bake for 35 to 40 minutes until edges are bubbling and golden brown.
- Remove from the oven and top with the remaining 2 ounces of queso fresco and sprinkle with dried cilantro.
- Allow to cool slightly before serving.
