Step-by-Step Instructions
  1. Soften the vanilla ice cream at room temperature for about 5 minutes.
  2. Chill the cola soda and lemon-lime soda in the refrigerator for at least 30 minutes.
  3. In a mixing bowl, whisk together the chilled coconut cream and fresh lime juice. Add simple syrup if desired.
  4. Pour equal parts of the chilled cola soda and lemon-lime soda into a tall glass, filling halfway.
  5. Add a spoonful of the coconut-lime mixture to the fizzy soda base and stir gently.
  6. Carefully add two scoops of softened vanilla ice cream on top.
  7. Drizzle more coconut-lime mixture over the ice cream and garnish with mint leaves, lime slices, and toasted coconut.
  8. Serve immediately and enjoy!
