For the Sauce
  • 1 can Diced Tomatoes Fresh or canned
  • 1 cup Heavy Cream Substitute with Greek yogurt or non-dairy alternative
  • 4 cloves Fresh Garlic Minced for maximum flavor
  • 2 tablespoons Olive Oil Extra virgin recommended
For Flavoring
  • 1 tablespoon Basil Fresh preferred, dried can suffice
  • to taste Salt
  • to taste Pepper

Method
 

Step-by-Step Instructions
  1. Boil a large pot of salted water, add pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
  2. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until golden brown.
  3. Add diced tomatoes to the skillet with garlic, season with salt and pepper, and simmer for about 5 minutes.
  4. Reduce heat to low, pour in heavy cream, and stir until combined. Cook for 3-4 minutes to thicken.
  5. Add the drained pasta to the skillet and toss to coat in the sauce. Add a splash of pasta water if needed.
  6. Serve immediately, garnished with fresh basil and optional grated Parmesan.

Notes

Be careful not to burn the garlic while sautéing; it should be fragrant but not bitter. Fresh tomatoes are great, but canned saves time.
