For the Salad
  • 2 to 3 pieces Persian or English Cucumbers Thin-skinned cucumbers can be used as a substitute.
  • 1 teaspoon Salt Essential for drawing out excess moisture from the cucumbers.
For the Dressing
  • 3 tablespoons Soy Sauce Liquid Coconut Amino can be used as a substitute.
  • 2 tablespoons Rice Vinegar Can be substituted with white wine vinegar.
  • 1 tablespoon Toasted Sesame Oil Light sesame oil can be used as a substitute.
  • 1 teaspoon Maple Syrup Sugar can be used as a substitute.
  • 1 tablespoon Grated Ginger Fresh ginger is recommended.
  • 1 clove Minced Garlic Roasted garlic can be used for a milder taste.
  • 1 teaspoon Red Chili Flakes Adjust based on personal spice preferences.
For Garnish
  • 1 tablespoon Toasted Sesame Seeds
  • 2 tablespoons Scallions (finely sliced)

Method
 

Preparation
  1. Wash the cucumbers under cool running water. Pat them dry and thinly slice them into rounds or half-moons.
  2. Place the sliced cucumbers in a strainer, sprinkle with salt, toss gently, and let rest for 15 to 20 minutes.
  3. In a small bowl, whisk together soy sauce, rice vinegar, toasted sesame oil, maple syrup, grated ginger, and minced garlic.
  4. After the cucumbers have drained, rinse them to remove excess salt, then drain again.
  5. Combine the drained cucumbers with the dressing in a large bowl and toss until evenly coated.
  6. Allow the salad to marinate for another 15 to 20 minutes at room temperature.
  7. Before serving, sprinkle with toasted sesame seeds and scallions, then toss gently.
