Ingredients

  • 2 cups Cucumbers thinly sliced
  • 1 cup Bell Peppers mixed colors, diced
  • 1/2 cup Red Onion thinly sliced
For the Dressing
  • 1/4 cup Extra Virgin Olive Oil or avocado oil
  • 2 tablespoons Apple Cider Vinegar or balsamic vinegar

Method
 

Prep and Combine
  1. Wash the cucumbers and bell peppers thoroughly. Slice cucumbers and cut bell peppers into bite-sized pieces. Set aside in a large bowl.

Make and Add Dressing
