  • 2 cloves Garlic (minced) Adjust to taste
  • 2 tablespoons Fresh Herbs (chopped) Parsley or cilantro
  • 1 teaspoon Spices (total) Cumin, paprika, or Italian seasoning
  • Salt and Black Pepper To taste
  • Olive Oil or Cooking Spray For preventing sticking and achieving crispness

Step-by-Step Instructions
  1. Prepare the vegetables by washing and grating or finely chopping your mixed vegetables.
  2. Remove excess moisture by squeezing out liquid from the grated vegetables using a clean towel.
  3. Combine vegetables with finely chopped onion, minced garlic, fresh herbs, and spices in a mixing bowl.
  4. Add flour and breadcrumbs to the mixture along with the egg or flax egg and mix until cohesive.
  5. Shape the mixture into fritters, about ½ to ¾ inch thick, and ensure they are compact.
  6. Preheat your air fryer to 375°F (190°C) and prepare the basket with cooking spray or olive oil.
  7. Air fry fritters in a single layer for 12-15 minutes, flipping halfway for even browning.
