- In a medium saucepan over medium heat, combine fresh blueberries, sugar, lemon juice, and lemon thyme. Bring to a gentle boil, then reduce heat and let simmer for about 15-20 minutes until thickened.
- While the compote cools, lay out half the slices of bread on a clean surface. Spread cooled blueberry compote over each slice, and sprinkle with a mix of white cheddar and mozzarella cheese.
- Top each cheese-covered slice with the remaining bread to form the sandwiches. Press down gently.
- Heat a skillet over medium heat and add unsalted butter. Cook sandwiches in the skillet for 2-3 minutes on one side until golden brown and crispy. Flip and cook the other side for another 2-3 minutes.
- Remove sandwiches from the skillet and let cool for a minute. Cut each sandwich in half and serve, optionally sprinkling flaky sea salt or fresh thyme on top.
