Step-by-Step Instructions
  1. In a medium saucepan over medium heat, combine fresh blueberries, sugar, lemon juice, and lemon thyme. Bring to a gentle boil, then reduce heat and let simmer for about 15-20 minutes until thickened.
  2. While the compote cools, lay out half the slices of bread on a clean surface. Spread cooled blueberry compote over each slice, and sprinkle with a mix of white cheddar and mozzarella cheese.
  3. Top each cheese-covered slice with the remaining bread to form the sandwiches. Press down gently.
