Step-by-Step Instructions for Crispy Cabbage Pancake
  1. In a large mixing bowl, shred approximately 2 cups of cabbage, grate 1 medium carrot, and slice 3 scallions. Mix these veggies together until well combined.
  2. In a separate bowl, whisk together 2 eggs, 1 cup of all-purpose flour, ½ cup of water, and season with salt, pepper, and 1 teaspoon of garlic powder.
  3. Pour the prepared batter over the vegetable mix and gently fold until everything is evenly coated.
  4. In a nonstick skillet, heat 1 tablespoon of oil over medium heat. Allow the oil to shimmer.
  5. Add half of the cabbage mixture to the skillet and flatten it into a pancake shape, about 1 inch thick. Cook for approximately 4 to 5 minutes or until the underside turns golden brown.
  6. Gently flip the pancake using a spatula and cook the second side for another 4 to 5 minutes.
