  • 1 large Egg or flax egg for vegan
  • 1 cup Panko breadcrumbs Gluten-free if needed

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Pat the shrimp dry with a paper towel.
  3. Whisk the egg in a medium bowl until well combined.
  4. Mix coconut flakes and panko breadcrumbs on a plate, adding salt and pepper.
  5. Coat each shrimp in the whisked egg, then dredge in the coconut-panko mixture.
  6. Arrange coated shrimp on a parchment-lined baking sheet with space between them.
  7. Bake for 15-20 minutes, flipping halfway, until golden brown.
  8. Cool the shrimp for about five minutes before serving.
