- Heat 1 tablespoon of oil in a large skillet over medium heat. Add the finely chopped onion and sauté for 2-3 minutes until translucent.
- Add 1 pound of ground beef to the skillet, breaking it apart. Cook for about 4-5 minutes until browned.
- Stir in 2 tablespoons of taco seasoning and 2 tablespoons of tomato paste, then add 1/4 cup of water or beef broth. Simmer for 3-4 minutes.
- Lay out a tortilla and add 1.5 to 2 tablespoons of shredded mozzarella cheese, followed by the beef filling. Fold the tortilla in half.
- Heat 3-4 tablespoons of oil in the skillet and fry the folded tacos for about 1 minute on each side until golden brown.
- Transfer the fried tacos to a wire rack, allow to cool slightly, and garnish with chopped cilantro before serving.
