Method
 

Muffin Preparation

  2. Prepare Muffin Batter: In one bowl, mix flour, baking powder, baking soda, and salt. In another, whisk together brown sugar, granulated sugar, eggs, and buttermilk, then add brown butter.
  3. Combine the wet and dry ingredients gently, folding in chopped rhubarb.
  4. Make Streusel: Mix melted butter, flour, granulated sugar, and nuts until crumbly.
  5. Fill Muffin Tin: Preheat oven to 350°F. Grease muffin tin and fill with batter, topping with streusel.
  6. Bake: Bake for 20-25 minutes until golden and a toothpick comes out clean.
  7. Cool: Let muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
