- Preheat your oven to 245°C (475°F). Wash and pierce sweet potatoes, wrap with garlic in foil, and bake for 35 minutes until tender.
- Allow sweet potatoes and garlic to cool, then peel and mash until smooth. Chill mixture in the fridge for 30 minutes.
- Set up coating stations: combine panko, Parmesan, parsley, sage, and salt in one dish, beat eggs in another.
- Fold in Gruyère into the chilled sweet potato mixture, form small balls, coat in panko, dip in eggs, and coat again in panko.
- Heat neutral oil to 175°C (350°F), fry sweet potato bites in batches for 2-3 minutes until golden and crispy.
- Drain on paper towels and drizzle with honey before serving warm.
