Method
 

Step-by-Step Instructions
  1. Preheat your oven to 245°C (475°F). Wash and pierce sweet potatoes, wrap with garlic in foil, and bake for 35 minutes until tender.
  2. Allow sweet potatoes and garlic to cool, then peel and mash until smooth. Chill mixture in the fridge for 30 minutes.
  3. Set up coating stations: combine panko, Parmesan, parsley, sage, and salt in one dish, beat eggs in another.
  4. Fold in Gruyère into the chilled sweet potato mixture, form small balls, coat in panko, dip in eggs, and coat again in panko.
  5. Heat neutral oil to 175°C (350°F), fry sweet potato bites in batches for 2-3 minutes until golden and crispy.
  6. Drain on paper towels and drizzle with honey before serving warm.
