Cooking Instructions
  1. Boil 1 cup of red lentils in a pot with 3 cups of water over medium heat for about 15 minutes until tender. Drain and cool.
  2. Boil 2 medium sweet potatoes until fork-tender, roughly 10-15 minutes. Drain and mash until smooth.
  3. Combine mashed sweet potatoes, cooled lentils, breadcrumbs, salt, black pepper, and paprika in a bowl. Mix thoroughly.
  4. Shape the mixture into small patties, about 3 inches in diameter, and place them on parchment paper.
  5. Heat olive oil in a skillet over medium heat and fry the patties for 4-5 minutes on each side until golden brown.
  6. Let the patties rest for 10 minutes on a wire rack or paper towels to absorb excess oil before serving.
