  • 2 tbsp Dill chopped
  • 2 tbsp Parsley chopped

  • 1/4 cup Oil for frying

Step-by-Step Instructions
  1. Prep Zucchini: Shred the zucchini and squeeze out moisture using a dishcloth or paper towel.
  2. Mix Ingredients: In a bowl, combine the zucchini, corn, Parmesan, eggs, breadcrumbs, flour, dill, parsley, salt, and pepper.
  3. Form Fritters: Shape the mixture into balls and flatten to about ½ inch thick.
  4. Heat Oil: Heat enough oil in a frying pan to cover the bottom with about ¼ inch depth.
  5. Cook Fritters: Place patties in the oil and fry for 3-4 minutes on each side until golden brown.
  6. Drain Excess Oil: Remove from oil using a slotted spoon and place on paper towels to absorb oil.
  7. Alternative Baking Method: Bake at 350°F for 40 minutes, flipping halfway.
