For Cooking
  • 2 tablespoons Olive Oil For brushing or shallow frying.

Method
 

Preparation
  1. Finely grate the zucchini, then squeeze out excess moisture using a towel.
  2. In a bowl, combine drained zucchini, feta cheese, herbs, breadcrumbs, egg, garlic, salt, and pepper. Mix until sticky and firm.
  3. Shape the mixture into balls, about 1-2 inches in diameter. Refrigerate if too wet, or add more breadcrumbs.
  4. Preheat oven to 375°F (190°C). Line a baking sheet with parchment. Space the balls evenly on the sheet and brush with olive oil.
  5. Bake for 20-25 minutes, flipping halfway, until golden brown and crispy.
  6. Let cool briefly before serving with tzatziki sauce.
