Step-by-Step Instructions
  1. Start by thawing your boneless chicken breasts and rinsing them under cold water; pat them dry. Peel and dice potatoes into bite-sized pieces, and finely mince the garlic.
  2. Drizzle olive oil at the bottom of the crockpot. Layer diced potatoes evenly, then place the chicken on top.
  3. Sprinkle minced garlic, salt, black pepper, and rosemary over chicken breasts.
  4. Pour chicken broth gently over the layered ingredients in the crockpot.
  5. Cover the crockpot; set on low for 6-8 hours or high for 3-4 hours.
  6. About 30 minutes before serving, sprinkle grated parmesan cheese over the chicken and potatoes.
  7. Once the chicken reaches an internal temperature of 165°F (75°C), stir to combine flavors and serve hot, garnished with parsley.
