Step-by-Step Instructions
- Start by thawing your boneless chicken breasts and rinsing them under cold water; pat them dry. Peel and dice potatoes into bite-sized pieces, and finely mince the garlic.
- Drizzle olive oil at the bottom of the crockpot. Layer diced potatoes evenly, then place the chicken on top.
- Sprinkle minced garlic, salt, black pepper, and rosemary over chicken breasts.
- Pour chicken broth gently over the layered ingredients in the crockpot.
- Cover the crockpot; set on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, sprinkle grated parmesan cheese over the chicken and potatoes.
- Once the chicken reaches an internal temperature of 165°F (75°C), stir to combine flavors and serve hot, garnished with parsley.
