  • 2-3 medium Carrots Grated
  • 1-2 pieces Apples (Granny Smith or Honeycrisp) Cored and diced
  • 1 cup Red Cabbage Finely shredded
  • 1/4 cup Raisins or Dried Cranberries
  • 1/4 cup Walnuts or Pecans Chopped
  • 1 handful Fresh Parsley Chopped
For the Creamy Citrus Dressing
  • 1/2 cup Plain Greek Yogurt
  • 1/4 cup Mayonnaise
  • 1/4 cup Fresh Orange Juice
  • 1/2 piece Lemon Juice
  • 1-2 tablespoons Honey Adjust sweetness to taste
  • Salt and Pepper To taste

Method
 

Directions
  1. Grate the carrots and add them to a large mixing bowl.
  2. Core and dice the apples, then add them to the bowl with the grated carrots.
  3. Finely shred the red cabbage and add to the mixture, along with raisins and chopped walnuts.
  4. Chop fresh parsley and add to the salad, then stir to combine.
  5. In a separate bowl, whisk together the yogurt, mayonnaise, orange juice, lemon juice, honey, salt, and pepper until smooth.
  6. Drizzle the dressing over the salad and toss until well combined.
  7. Chill the salad in the refrigerator for about 15 minutes before serving.
  8. Garnish with extra chopped nuts and parsley before serving.
