  • 3 firm cucumbers thinly sliced
  • 1 red onion thinly sliced
For the Dressing
  • 1 cup Greek yogurt can substitute with more yogurt for a lighter salad
  • 2 tablespoons mayonnaise can be omitted or replaced with more yogurt
  • 1 tablespoon olive oil extra virgin recommended
  • 0.5 tablespoon lemon juice adjust to taste
  • 2 tablespoons fresh dill avoid dried dill
  • 1 clove minced garlic chopped finely
  • 1 teaspoon salt divide use
  • 1 teaspoon black pepper to taste
  • 1 teaspoon sugar optional

Method
 

Preparation
  1. Wash the cucumbers under cool running water and thinly slice them into rounds. Place in a colander and sprinkle half of the salt over them. Let rest for 10-15 minutes.
  2. In a medium mixing bowl, combine Greek yogurt, mayonnaise, olive oil, lemon juice, minced garlic, fresh dill, remaining salt, black pepper to taste, and optional sugar. Whisk until smooth.
  3. Pat the cucumbers dry with paper towels. Add the cucumbers and red onion to the dressing and gently stir to coat evenly.
  4. Transfer the salad to a serving bowl or airtight container. Refrigerate for at least 20 minutes before serving.
  5. After chilling, stir gently and serve cold, optionally garnished with additional dill.
