  • 2 medium Cucumber Seedless varieties preferred
  • 1 small Red Onion Thinly sliced
  • 200 grams Feta Cheese Crumble by hand
  • 1 tablespoon Dill Fresh
  • 1 tablespoon Parsley Fresh
  • 1 cup Cherry Tomatoes Optional, halved
  • 1/2 cup Kalamata Olives Optional, sliced
For the Vinaigrette
  • 2 tablespoons Lemon Juice Freshly squeezed
  • 1/4 cup Extra Virgin Olive Oil Organic preferred
  • 1 teaspoon Dried Oregano
  • 1 to taste Salt
  • 1 to taste Black Pepper

Method
 

Preparation Steps
  1. Wash cucumbers thoroughly under cold water. Slice into thin rounds or half-moons.
  2. Peel and thinly slice the red onion.
  3. In a bowl, combine lemon juice, olive oil, oregano, salt, and pepper. Whisk until emulsified.
  4. In a large bowl, combine cucumbers, red onions, and crumbled feta. Add dill and parsley.
  5. Drizzle the vinaigrette over the salad and toss gently. Let it rest for about 10 minutes.
  6. Serve fresh in individual bowls or on a platter.
