Step-by-Step Instructions for Chocolate Berry Cake
  1. Prepare Mixed Berry Jam: Blend strawberries, blueberries, blackberries, and raspberries until smooth. In a medium pot, combine with sugar and vanilla, simmer for 35-40 minutes until thick, then cool.
  2. Prepare Cake Batter: Preheat oven to 350°F (175°C). Grease three 6-inch cake pans. Whisk dry ingredients in one bowl, cream butter and sugar in another until fluffy. Add eggs and vanilla, mix. Gradually add dry ingredients alternating with buttermilk and coffee.
  3. Bake Cakes: Distribute batter evenly in pans. Bake for 39-44 minutes until a toothpick comes out with a few moist crumbs. Cool in pans for 5 minutes before transferring to a wire rack.
  4. Prepare Chocolate Buttercream: Whip softened butter until fluffy. Add melted dark chocolate, mix. Sift cocoa powder and powdered sugar in, add heavy cream, blend to desired consistency.
  5. Assemble the Cake: Place one cake layer on a plate, spread a layer of buttercream, pipe a border, fill with jam. Repeat with second layer, top with third layer, apply thin coat of buttercream around cake and chill for 30 minutes.
  6. Make Ganache: Heat heavy cream until steaming. Pour over chopped dark chocolate, stir until smooth. Cool slightly until it thickens before using.
  7. Decorate the Cake: Drizzle ganache over the chilled cake, allowing it to drip down the sides. Decorate with fresh berries, then serve.
