Ingredients
  

For the Yogurt Base
  • 2 cups Greek yogurt full-fat for creaminess
  • 3 tablespoons honey or maple syrup adjust to taste
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon vanilla extract pure quality preferred
For the Blueberry Swirl
  • 1 cup blueberries fresh or thawed frozen
  • 1 teaspoon cornstarch optional; mix with water before using

Method
 

Preparation Steps
  1. Gather all your ingredients and let them come to room temperature, then set out an ice cube tray or silicone molds.
  2. In a mixing bowl, combine Greek yogurt, honey or maple syrup, lemon juice, and vanilla extract. Stir until smooth and creamy.
  3. In a small saucepan, cook blueberries over medium heat for about 5-7 minutes until they release their juices. If using cornstarch, mix it with water first, then stir into the blueberries.
  4. Once the blueberry mixture thickens, let it cool before molding.
  5. Fill molds halfway with yogurt, add a dollop of blueberry swirl, then top with more yogurt. Use a toothpick to swirl.
  6. Freeze for at least 3 hours or until solid.
