  • 1 kg boneless, skinless chicken thighs perfectly tender
For the Marinade
  • 1/4 cup hoisin sauce provides a sweet depth
  • 1/4 cup soy sauce adds essential umami
  • 2 tbsp oyster sauce optional
  • 2 tbsp honey or maple syrup for sweetness
  • 2 tbsp Shaoxing wine or dry sherry for acidity
  • 1 tbsp sesame oil adds nuttiness
  • 1 tbsp five-spice powder for aromatic punch
  • 2 tbsp brown sugar for caramelization
  • 3 cloves garlic minced
  • 1 tbsp ginger grated
  • 1 pinch red food coloring optional for presentation

Method
 

Preparation Steps
  1. In a mixing bowl, whisk together the hoisin sauce, soy sauce, optional oyster sauce, honey, Shaoxing wine, sesame oil, five-spice powder, brown sugar, minced garlic, grated ginger, and optional red food coloring until well-combined.
  2. Thoroughly coat the chicken thighs with the marinade, then cover and refrigerate for at least 4 hours.
  3. Preheat your oven to 400°F (200°C) and prepare a baking tray with a wire rack.
  4. Drain the excess marinade off the chicken before placing it on the wire rack.
  5. Bake the chicken for 25–30 minutes, or until the internal temperature reaches 165°F (75°C).
  6. Every 10 minutes, baste the chicken with reserved marinade for moisture and flavor.
  7. Switch to broil in the last 5 minutes for a caramelized finish.
  8. Let the chicken rest briefly before slicing and serving over jasmine rice or noodles.
