- In a large mixing bowl, combine the chicken, red onion, cilantro, and avocado. Mix gently.
- In a blender, combine cottage cheese, mayonnaise, onion powder, lime juice, salt, and pepper. Blend until smooth.
- Pour the dressing over the chicken salad mixture and stir gently. Chill in the refrigerator for at least 30 minutes.
- Slice the cucumber into rounds and pat dry with paper towels.
- Spread cream cheese over each cucumber slice. Add a tablespoon of chicken salad mixture and roll tightly.
