Ingredients
  

For the Chicken Salad
  • 2 cups Cooked, shredded chicken Rotisserie or cooked chicken breasts work well.
  • 1/2 cups Red onion Soak in water for 10 minutes for milder flavor.
  • 1 handful Fresh cilantro Chopped.
  • 1 medium Avocado Diced; mash just before adding.
  • 1 cup Cottage cheese Drain for 30 minutes before mixing.
  • 2 tablespoons Mayonnaise
  • 1 teaspoon Onion powder
  • 1 tablespoon Lime juice Juice from one lime.
For the Wrap
  • 1 medium English cucumber Slice about 1/8 inch thick.

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine the chicken, red onion, cilantro, and avocado. Mix gently.
  2. In a blender, combine cottage cheese, mayonnaise, onion powder, lime juice, salt, and pepper. Blend until smooth.
  3. Pour the dressing over the chicken salad mixture and stir gently. Chill in the refrigerator for at least 30 minutes.
  4. Slice the cucumber into rounds and pat dry with paper towels.
  5. Spread cream cheese over each cucumber slice. Add a tablespoon of chicken salad mixture and roll tightly.
  6. Slice each roll in half and serve, optionally garnished with everything bagel seasoning and hot sauce.
