  • 1 cup Sour Cream Adds creaminess
  • 2 tablespoons Apple Cider Vinegar Can substitute with white wine vinegar or lemon juice
  • 1 tablespoon Sugar Adjust to taste
  • 1 teaspoon Salt To enhance flavors
  • 1 teaspoon Pepper To enhance flavors
For Garnish
  • 1 cup Fresh Parsley or Cilantro Adds brightness

Method
 

Preparation Steps
  1. Boil fresh corn kernels in salted water for about 5 minutes until bright yellow and tender. If using canned corn, drain and rinse it.
  2. In a large bowl, combine cooled corn with diced cooked bacon and finely sliced green onions. Mix gently.
  3. Whisk together mayonnaise, sour cream, apple cider vinegar, sugar, salt, and pepper until smooth.
  4. Pour the dressing over the corn and bacon mixture, and toss gently to coat.
  5. Fold in crumbled feta cheese if desired for added flavor.
  6. Adjust seasoning to taste, cover, and refrigerate for at least 30 minutes.
  7. Stir gently before serving and garnish with freshly chopped parsley or cilantro.
